Meet Steve, the culinary engine behind Saint & Rogue.
With more than two decades of experience in the kitchen, Steve brings a wealth of knowledge, a sharp eye for detail and a genuine love of good food to everything that comes out of the Saint & Rogue kitchen.
He’s often there before the first staff member has even turned a key, taking a quiet moment with an instant coffee (we try not to judge him), clearing his head and getting ready for the day ahead. Because for Steve, great cooking starts well before the first plate leaves the pass.
Steve’s English and Cypriot heritage also finds its way into the kitchen, with influences from both cultures evident across a handful of dishes on the menu. It’s a subtle nod to his background and a reflection of the way food can carry a sense of place, family and tradition, while still feeling right at home at Saint & Rogue.
His approach to food centres on quality produce, seasonality, and letting good ingredients do the talking. Steve has a particular appreciation for working with local, seasonal produce, letting what’s available at its best shape the menu. It’s about understanding the ingredient, knowing when not to overcomplicate it and putting the technique behind the scenes to make sure the final dish speaks for itself.
And if you ask him for one little secret to better cooking at home? Lemon juice. A squeeze at the right moment can lift a dish, sharpen the flavours and bring everything together.
